Overview

This qualification is designed for Managers and Supervisors. It equates to an intermediate qualification.

Course Content

The training program lasts around 18 hours (covered typically over 3 days) and covers the following topics:

Legislation
Supervisory management
Temperature control (chilling, cooking)
Cleaning
Contamination control
Applying and monitoring good hygiene practices
Implementing good food safety procedures
Contributing to the safety training of others
Food premises and equipment

Assessment method

60 multiple choice question examination, over 2 hours. Candidates need 40 correct answers to pass the course.

Certificate

Exam papers are marked by the Chartered Institute of Environmental Health (CIEH) and certificates are issued within around 6 weeks of taking the course. RS Food Hygiene will then either hand deliver or post (by Royal Mail Recorded Delivery) the Certificate to you.
